Bone Broth and Vegetable Soup
Bone broth is one of the most powerful gut-healing foods, containing collagen, gelatin, and amino acids like glutamine, which help repair the intestinal lining. When combined with fiber-rich vegetables, this soup becomes a nutrient-dense meal that supports digestion and reduces inflammation.
- 4 cups bone broth
- 2 cups water
- 2 medium carrots diced
- 2 celery stalks diced
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 cup green beans trimmed and cut
- 1 cup kale chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lemon optional
In a large pot, heat olive oil over medium heat.
Add onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
Stir in carrots and celery, cooking for another 5 minutes.
Pour in the bone broth and water, and bring to a gentle simmer.
Add green beans, kale, herbs, and bay leaf.
Season with salt and pepper to taste, then cover and simmer for 20-25 minutes until the vegetables are tender.
Remove bay leaf and adjust seasoning as needed.
For a zesty finish, squeeze lemon juice into the soup before serving.
