Chickpea and Avocado Tacos

Chickpeas are an excellent plant-based protein source that helps reduce cholesterol levels. Avocados provide heart-healthy monounsaturated fats, while whole-wheat tortillas add fiber for better digestion and blood sugar control.

Ingredients
  

  • 1 can chickpeas 15 oz, drained and rinsed
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1 small red onion finely chopped
  • 1 cup corn fresh or frozen
  • 1 lime juiced
  • 1/4 cup fresh cilantro chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • Optional toppings: crumbled feta salsa, or hot sauce

Instructions
 

  • In a mixing bowl, combine the chickpeas, avocado, cherry tomatoes, red onion, and corn.
  • Drizzle with lime juice, and sprinkle in cumin, smoked paprika, salt, and pepper. Gently toss to combine.
  • Heat the tortillas in a skillet over medium heat until warm and slightly crisped, about 1-2 minutes per side.
  • Divide the chickpea and avocado mixture among the tortillas.
  • Top with fresh cilantro and any additional toppings like feta, salsa, or hot sauce if desired.
  • Serve immediately and enjoy the burst of flavors in every bite!
