Fermented Kimchi and Quinoa Bowl

Fermented foods introduce beneficial bacteria into your gut, restoring balance to your microbiome. Kimchi, a traditional Korean dish made from fermented cabbage and spices, contains lactobacillus bacteria, which help break down food and improve digestion. Pairing kimchi with quinoa, a fiber-rich grain, enhances this meal’s gut-healing properties.

Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup fermented kimchi chopped
  • 1/2 cup cucumber diced
  • 1/2 cup carrots shredded
  • 1/4 cup green onions sliced
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon sesame seeds for garnish
  • Salt and pepper to taste

Instructions
 

  • In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer covered for 15 minutes or until water is absorbed.
  • Remove from heat and let quinoa sit covered for 5 minutes, then fluff with a fork.
  • In a large bowl, mix cooked quinoa with sesame oil and soy sauce. Season with salt and pepper to taste.
  • Toss in the chopped fermented kimchi, diced cucumber, shredded carrots, and green onions until well combined.
  • Divide the mixture into two serving bowls and sprinkle sesame seeds on top.
  • Serve immediately or chill in the refrigerator for a refreshing cool-down. Enjoy your nutritious creation!
