Fermented Kimchi and Quinoa Bowl
Fermented foods introduce beneficial bacteria into your gut, restoring balance to your microbiome. Kimchi, a traditional Korean dish made from fermented cabbage and spices, contains lactobacillus bacteria, which help break down food and improve digestion. Pairing kimchi with quinoa, a fiber-rich grain, enhances this meal’s gut-healing properties.
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup fermented kimchi chopped
- 1/2 cup cucumber diced
- 1/2 cup carrots shredded
- 1/4 cup green onions sliced
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce or tamari
- 1 teaspoon sesame seeds for garnish
- Salt and pepper to taste
In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer covered for 15 minutes or until water is absorbed.
Remove from heat and let quinoa sit covered for 5 minutes, then fluff with a fork.
In a large bowl, mix cooked quinoa with sesame oil and soy sauce. Season with salt and pepper to taste.
Toss in the chopped fermented kimchi, diced cucumber, shredded carrots, and green onions until well combined.
Divide the mixture into two serving bowls and sprinkle sesame seeds on top.
