Roasted Salmon with Garlic & Asparagus

Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 1 pound fresh asparagus trimmed
  • 4 cloves garlic minced
  • 1 lemon zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper.
  • Place salmon fillets on a baking sheet lined with parchment paper.
  • Arrange asparagus around the salmon and drizzle the garlic mixture over both the fillets and asparagus.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and asparagus is tender.
  • Garnish with fresh parsley before serving.
