Roasted Salmon with Garlic & Asparagus

- 4 salmon fillets about 6 oz each
- 1 pound fresh asparagus trimmed
- 4 cloves garlic minced
- 1 lemon zested and juiced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh parsley chopped (for garnish)
Preheat oven to 400°F (200°C).
In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper.
Place salmon fillets on a baking sheet lined with parchment paper.
Arrange asparagus around the salmon and drizzle the garlic mixture over both the fillets and asparagus.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and asparagus is tender.
Garnish with fresh parsley before serving.
